
Emu
Emu meat is similar in appearance to ostrich with its own unique flavour. As with ostrich, emu is a lean red meat high in iron and very low in fat. It has a finer texture than ostrich and cut sizes are smaller. The standard processing specification for emu is boneless cuts denuded, Fan fillet Iw/vac, Mixed steaks MW/vac and Trim. Specific packing requirements are available on request.
